Fish lovers can gorge on some lip-smacking prawn and fish delicacies at 'Prawn Crunch', a small eatery on Indiranagar 80 Feet Road. The menu includes all that one could possibly desire — prawn biryani, vada pav burgers and other items.

Prawn burgerKedarnath Reddy, a young entrepreneur who started the eatery, says that he serves high-quality prawns by eliminating the concept of middlemen. "Before diversifying into the food business, I was into farming. I have seen the food industry as a producer as well as a supplier, as I used to sell prawns grown in my farm to middlemen. I was cheated several times and that is when I took a stand — I decided that I would not buy prawns from the middlemen once I started an eatery. The prawns served are cultured in my farm and some of them are sold to me directly by a society of farmers, from coastal parts of Karnataka," says Kedarnath.

The food served in the eatery is varied and often customised according to the taste of the customers. What adds to the eatery's popularity is that it is pretty affordable, as Kedarnath believes that the common man should be able to enjoy the food served in his eatery. "In the thali section, we have dishes like fish thali, in which we serve Kane fish, along with rice and gravy. These are pretty easy on the pocket. In another thali, we serve three pieces of medium-sized prawn, some gravy and rice," he adds.

"Fish biryani is made in the typical Andhra style, where the fish is cooked along with the rice and not layered separately as is done in other places. We cook it in this manner so that there is a uniformity in taste and aroma. We use a coastal fish called mahi mahi — these fish are good, as they can be easily cooked in the tandoor," he states.

The prawn biryani, however, is made in a different way — the meat is pan-fried and then added to the rice. Other items like prawn vada pav and fish vada pav act as great fillers. Prawn and fish burgers are equally popular and are enjoyed by many who visit the eatery on a regular basis.

Kedarnath says that apart from the burgers and thali, the other items are generally divided into three categories — steamed, grilled and deep-fried or crumb-fried. Steamed fish is marinated first, then steamed and wrapped in a banana leaf. Grilled fish is pan-fried, but with very little oil. "We put the oil in the marinade and hardly use any oil while frying the fish. The crumb from the deep-fried fish is made by us and we have our own recipe for it. We generally customise the use of oil as per the taste of the customer," notes Kedarnath.
