Exotic breakfast specials

There are no hard-and-fast rules that dictate what food must be served for breakfast. At least one fourth of a day's nutritional requirements should be provided at breakfast. Here are few healthy recipes to try.

Mixed Fare


Ingredients: Germinated green gram — a handful, oats porridge - 2 cups; cut banana - 1, toasted bread - a slice, cut into bits, washed raisins - a few, honey — 2 teaspoons.
Method: Mix all the ingredients in a mixing bowl uniformly. Serve hot or cold.

Crushed Idli Payasa

Ingredients: Prepared idlis — 4, thickened milk (boiled) — ½ a litre, sugar — 6 tablespoons, mixed crushed nuts (kaju, badam and pista) — a handful, crushed cardamom — ½ teaspoon, saffron — few petals and home-grown rose petals — a few.

Method: Crush the idlis while the milk is thickening on the stove. Add sugar to dissolve and add the crushed idlis. Let it simmer for a minute or two. Remove the pan from the heat, add the nuts, cardamom powder and saffron, transfer the contents into a decorated serving bowl. Decorate with rose (red) petals if available.

Chick Dosas in Coconut Milk

Ingredients: Thick dosas using pure ghee — 4 nos, jaggery syrup - ½ a cup, coconut milk — 4 tablespoons.

Method: Cut the dosas into diamond shapes. Mix together the jaggery syrup and thick coconut milk. Boil it for a minute or two and add the diamond cuts into the milk. Serve.
For the dosa dough, add a table spoonful soya flour for better taste.
