Garam Masala Puffed Rice
Ingredients: Coconut oil — 25 grams, refined oil — 50 grams, mustard seeds — 4 tsps, turmeric powder — ½ tsp, curry leaves — 1 fistful, garlic cloves— 10 pods, salt to taste, chilly powder — 1½ tsps, broken dry chillies 4 to 6, ground nuts — a handful, puffed rice — 1 cup.
Method: Heat oil in a vessel and add mustard seeds, curry leaves, garlic cloves, broken red chillies and groundnuts and saute them. Once the mixture is completely dry and roasted, add turmeric powder , salt, chilly powder, and add the puffed rice to this and mix it well. Allow the rice to cool and store it in a dry container.
Bhel
Ingredients: Soaked and boiled peanuts — ½ cup, moong sprouts — ½ cup, chopped tomatoes — ½ cup, chopped apples — ½ cup, grated or chopped raw mango — ¼ tsp, pomegranate seeds — ½ cup, orange segments — 2 cups, puffed rice — 1 cup, chopped coriander — ¼ cup, lemon juice — 3 tsps, salt — to taste, sweet chutney — to taste, green chutney — to taste.
Method: Mix all the ingredients together and serve immediately.
Spicy Puffed Rice
Ingredients: Puffed rice — 2 cups, chili powder — 1 tsp, turmeric — 1 pinch, coriander powder — ½ tsp, cumin powder — ¼ tsp, asafoetida — a pinch, coriander leaves — 4 tsps, chopped tomato — ¼ cup, oil — 4 tsps, mustard seeds — 1 tsp, curry leaves — a few, salt — to taste
Method: Soak the puffed rice in water for up to 10 minutes and drain the excess water out of it. In a pan, add oil, mustard seeds, asafoetida, curry leaves, tomatoes and fry them well. Next, add the puffed rice, coriander powder, cumin powder, turmeric powder, chilli powder, salt and mix well. Cook for up to 3 minutess under medium heat and garnish with coriander leaves and serve hot with tea.
